Serves 1-2 (Per Wrap)

Ingredients (Per Wrap)
- Spinach tortillas burrito sized
- ½ cup Spinach
- 3 tbps Hummus
- 1/2 sliced Red bell pepper
- ½ thinly sliced shallot
- ½ cup Black beans
- ½ cup Mexican blend cheese
- Vegetarian? Or should we add protein
Step 1
Spread layer of hummus onto tortilla wrap of your choosing (would be better to get larger ones)
Step 2
Layer the wrap with spinach and cheese (optional) on the bottom.
Step 3
Add black beans.
Step 4
Add sliced shallots and red bell pepper in a line in the middle.
Step 5
Tightly roll up the tortilla and its ingredients. (It’s okay if some filling spills out on the edges)
Slice off the ends and cut into pieces.
Step 6
